Quick Spanish Tortilla with Slide Chips, Greens, and Aioli

This alternative Spanish Tortilla is super quick and easy and uses fresh, local free-range eggs. You'll add in Madison's own Slide Sea Salt and Malt Vinegar Potato Chips (available for sale on our marketplace!) to give a little extra kick. You will then whip up a quick and easy homemade aioli, and serve these "tortillas" over a bed of local, organic mixed greens.

Ingredients

  • 6 Eggs - Sourced from Yuppie Hill Poultry, Burlington, WI

  • 2 1/2 oz Sea Salt & Vinegar Chips - Sourced from Slide Chips, Madison, WI

  • 2 oz Mixed Greens - Sourced from Vitruvian Farms, McFarland, WI

  • 1 Yellow Onion - Sourced from Alsum Farms, Friesland, WI

  • 5 tbsp Mayonnaise

  • 2 cloves Garlic

  • 1 tbsp Dry Sherry Wine

  • 2 tbsp Olive Oil

  • 1/2 tsp Salt

  • Dash of Pepper

Step 1: Prep Ingredients

  • Peel and thinly slice onion

  • Mince garlic

  • Lightly crush chips (in bag)

Step 2: Make "Tortilla" Batter

  • Add 1 tablespoon olive oil in small non-stick skillet, bring to medium heat

  • Add onions, cook until softened and just beginning to brown, 3 minutes

  • Add cooked onions, sherry, ½ teaspoon salt, and dash of pepper to bowl

  • Break eggs into bowl and whisk

  • Fold in chips

Step 3: Start Cooking Tortilla

  • Add another 1 tablespoon olive oil in now-empty skillet over medium heat

  • Add "tortilla" mix

  • Cook, shaking pan occasionally, until tortilla is mostly set but still wet on top, 2 minutes

Step 4: Flip and Finish Tortilla

  • Place a large pot lid over tortilla and carefully invert entire tortilla so that it's resting on top of pan lid

  • Slide tortilla back into skillet so that the cooked side is now facing up

  • Continue to cook, shaking occasionally, until tortilla is golden brown on second side and barely cooked through, 2 minutes longer

  • Slide tortilla onto a cutting board and allow to cool

Step 5: Make Aioli

  • Combine mayonnaise and garlic in a small bowl

  • Whisk constantly while slowly drizzling in olive oil

  • Whisk in a few tablespoons of water to desired consistently

  • Season to taste with salt and pepper

  • Slice tortilla into fourths

Step 6: Plate with mixed greens. Enjoy!

Partnering with Isthmus Eats, Madison's farm-to-table meal kit company, we decided to create a local meal kit delivery option for Milwaukee. Our goal is to offer a meal planning tool that focuses on the basics - cooking and eating great home-cooked meals... while reducing waste and supporting local farms/businesses along the way! Our meal kits are locally-inspired, locally-sourced, and hand-delivered straight to your home or work.
